Cheesy Chicken Cauliflower Soup THM~S

So winter is almost over, but since I love soup on a cold winter day I threw a few things together and came up with this delicious comforting soup. And I even wrote the ingredients down this time πŸ™‚

Cheesy Chicken Cauliflower Soup THM~S
Serves 5
A delicious comforting soup. If you are following Trim Healthy Mama this is an S meal.

Ingredients
  1. 3 large chicken breasts (cooked and cubed)
  2. 3 c water (with chicken boullion cube)
  3. 1 lb cauliflower
  4. 4 oz cream cheese
  5. 1/4c heavy whipping cream
  6. 1 c shredded cheddar cheese
  7. 1 t garlic salt
  8. 1/2 t pepper
  9. 1/2 c bacon (cooked and crumbled)
  10. 1/4 c chopped onion
Instructions
  1. Cook cauliflower,chicken boullion and onion in the water until soft. (you can use chicken broth instead of water if you prefer)
  2. Add cream cheese and allow to melt.
  3. Stir in the rest of the ingredients and allow the cheese to melt.
  4. Enjoy
Notes
  1. If you want a creamier/cheesier soup feel free to add more cream cheese or shredded cheese!

Strawberry ‘Pretzel’ Dessert

Strawberry season is almost over here in the South and I have been taking advantage of having our own strawberry patch. I made this dessert 3 or 4 times in just a few short weeks time! It is the closest thing I have found to replace the Strawberry Pretzel Dessert I used to love making before Trim Healthy Mama πŸ˜‰

I used a combination of different recipes and added my conversions and I am so happy with how it turned out. The salt and nuts in the crust gives it the salty, crunchy ‘pretzel’ taste πŸ™‚

A delicious remake of Strawberry Pretzel Dessert that is delicious, healthy and sugar free.

Crust
  1. 1 c almond flour
  2. 3/4 c chopped nuts
  3. 1/4 t sea salt
  4. 2 T xylitol
  5. 2 drops liquid stevia
  6. 4 T butter melted
Pudding Layer
  1. 1/2 c 'pudding mix' (recipe below)
  2. 1 1/2 c milk (can use part almond milk and part half and half)
  3. 1 t vanilla
  4. 1 T plain gelatin
  5. 1-8oz cream cheese
Strawberry Layer
  1. 1/3 c sugar free strawberry jello (mine was sweetened with xylitol)
  2. 1 c boiling water
  3. 1 c cold water
  4. 1 pint sliced strawberries
For crust
  1. Mix all the ingredients together and pour in a 8 x 8 square pan, bake at 350 for 20 minutes or until edges are a golden brown. Let cool completely before adding next layer.
For pudding layer
  1. Soak 1 T plain gelatin in 1/4 cold water. Heat milk, vanilla, and pudding mix together until really hot but not boiling. Remove from heat and add gelatin mix right away. Allow to cool for about 10 minutes then pour into blender with 8 oz cream cheese. Blend well, pour over cooled crust and put in refrigerator until completely set up. (may take 1-2 hours)
Strawberry Jello layer
  1. Add strawberry gelatin to boiling water, stir until dissolved. Add cold water and strawberries and allow to cool until it just starts to thicken slightly. Pour over the already set up pudding and return to refrigerator and allow to set up completely.
  2. Enjoy!

 Don’t let the instructions scare you from making it! It is actually really simple and so delicious. It is worth the wait it takes, until it has all set up.

Strawberry (Pretzel) Dessert THM S

The ‘Pudding’ recipe was shared on Facebook by Char Eash and I am sharing it with her permission… It is a very versatile pudding mix and it has taken the place of Instant Vanilla Pudding for me! Yay πŸ™‚

1 cup sweetener (I used Birch Xylitol)
1/2 – 1 tsp. Glucomannan
2 scoops vanilla whey protein powder
1 tsp. salt
Mix together and store in airtight container. Use 1/2 cup mix per recipe

To just make the pudding:
2 cups liquid. I used 1 cup almond milk and 1 cup 1/2 and 1/2.
1 tsp. vanilla – or to taste
*Mix with 1/2 cup of the “pudding mix” in a medium saucepan.
*Heat to just very hot, almost boiling, stirring constantly, immediately remove from heat.
*Add 1 Tablespoon plain beef gelatin soaked in 1/4 c. cold water to mixture. Stir in, and cool. Add to a delight recipe, or use by itself as ‘custard’ or fresh fruit. It will continue to set up when it’s chilled. If you don’t care for gluccie, I think you could use more gelatin to make up the difference. Gluccie helps keep a softer “firm.”
NOTE on pudding: If you wish to use the pudding alone, you may want to use less sweetener. If you want it for ‘custard’ only, I would use less gelatin, as this sets up pretty much like jello. After you make it once, you can better ‘tweak’ it to how you like it. This pudding is really good, tastes like a hot custard. I could hardly leave it alone. Enjoy!

I am finally back with another recipe! This recipe was slightly adapted from a stir fry recipe my mom made for us while we were growing up. I  loved it back then and now its one of my ‘go to’ recipes because its so simple and is a complete ‘E’ meal (if you’re following Trim Healthy Mama) in a short time!

Ingredients
  1. 4 chicken breasts
  2. 1 c greek yogurt (or 1/2 c greek yogurt and 1/2 c reduced fat mayo)
  3. 1 tsp garlic powder
  4. 1 Tbsp liquid aminos (or soy sauce)
  5. 1/2 tsp ground ginger
  6. 1 pkg mixed vegetables (Sams Club has some great combinations)
  7. brown rice
Instructions
  1. Preheat oven to 350*
  2. Layer chicken in greased 9x13 baking dish.
  3. Mix greek yogurt, garlic powder, liquid aminos and ginger together and spread evenly over chicken.
  4. Bake uncovered for 30 minutes.
  5. Layer the vegetables on top and bake another 30 minutes.
  6. Serve over rice.

Homemade Italian Dressing

 These long winter days are starting to make me feel a little cooped up but then there’s the occasional warmer day that gives me spring fever πŸ™‚ I am so ready for all those fresh garden goodies again! Yeah I know its still a few months away, but a girl can dream right?!
