Hamburger Chip Dip

So its almost time for the Superbowl again, and even though I’m not much of a football fan I enjoy the party and the of course all the snacks πŸ™‚  Tammy from Missionary Trek was wanting to have a good superbowl recipe to share on her blog so I came up with ‘Hamburger Chip Dip’. When I think of parties there has to be some kind of chips and dip involved πŸ™‚ This one is simple to make and I came up with the recipe by myself, so if you don’t have something it calls for, just substitute πŸ™‚ But don’t blame me if its not good then! Ham Chowder

I feel like I have been having writers block ever since the Christmas vacation I took! It could quite possible have something to do with being extremely busy the past month?! LOL

Nevertheless today there is an awesome recipe that I am sharing at Woman to Womans that I created all by myself! Yup little me that has to have a recipe with detailed instructions actually launched out and created a recipe πŸ™‚

Pumpkin Whoopie Pies with Cream Cheese Icing anyone? Its oh so good and a must try recipe this fall!

Yes I am loving this time of the year πŸ™‚ 
Hunting season not so much cause it takes away from the longer evenings, but guess what??!! My hubby is making an enclosed tree stand that is insulated and all so hopefully Shania and I will be able to go with him soon and not freeze πŸ™‚ Thats exciting, cause I hate getting cold!!

Sugar Free Pumpkin Torte

So it seems this Trim Healthy Mama lifestyle is becoming pretty popular among alot of women and especially Moms. I am intrigued by it and have been playing around with some of the recipes seeing what I can come up with. The main thing for me is, we have to be able to enjoy the food. I am not into eating something that doesn’t taste good, just because its healthy. So I have been trying some of the recipes before buying the book just to see if this is something that will work for us. 

Xylitol takes a little time for your body to get used to it, so if you are planning to use Xylitol as your main sugar substitute,  I recommend starting off slowly and letting your body adjust.

I also want to buy the Trim Healthy Mama book yet because I have heard so much good about it and know I would benefit alot from reading it!

This is the first recipe I converted over and I was pretty excited about it πŸ™‚ 

Sugar Free Pumpkin Torte

 

Sugar Free Pumpkin Torte-S
A delicious Pumpkin dessert that is Sugar free and still as delicious as ever.

Crust
  1. 1 c chopped pecans
  2. 1/4 c melted butter
  3. 1/4 c xylitol
  4. 1/2 t cinnamon
Cream Cheese Layer
  1. 4 oz cream cheese
  2. 3/8 c xylitol (1/4 c + 2 Tablespoons)
  3. 1 egg
Torte layer
  1. 1/4 c xylitol
  2. 1/4 t salt
  3. 2 eggs (separated)
  4. 1/4 c almond milk
  5. 1 1/2 t cinnamon
  6. 1 c pumpkin
  7. 1 1/2 t gelatin
  8. 1/8 c cold water
Crust
  1. Mix together and spread in 8 x 8 pan
Cream Cheese layer
  1. Mix well and pour over crust, Bake at 350* for 25 minutes.
Torte layer
  1. Soak gelatin in cold water. Cook together, sugar, salt, egg yolks, milk, cinnamon, and pumpkin until thickened. Add Gelatin and water.
  2. Once cooled, beat egg whites and fold into pumpkin mix. Pour over cooled crust and refrigerate for an hour before serving.

Chicken and Rice

What is the first thing of think of when you think Chicken and Rice?

  • Comfort food?
  • Simple meal?
  • Delicious? 

I think all of the above apply to this recipe πŸ™‚ At least for me! I have a love for chicken and rice the last while and my daughter loves it too so its a simple meal during the day when hubby is at work.
