‘Triple’ ‘Chocolate’ Bundt Cake!!!! 

I’m basically screaming the title there in case you didn’t notice 🙂 Chocolate is delicious, but TRIPLE CHOCOLATE! Ahh divine!

I got this recipe from a friend and knew right away this was a keeper before I even made it!

1st Layer
  1. 1 Chocolate Cake Mix, eggs, oil and instead of water add coffee
  2. 1 box instant chocolate pudding
  3. 1 c chocolate chips
  4. squirt chocolate syrup
2nd Layer
  1. 8 oz cream cheese
  2. 1/2 c sugar
  3. 1 egg
  4. 1 t vanilla
Instructions
  1. Preheat oven to 350*
  2. Mix the chocolate cake mix as directed on the back of the box, except instead of putting in the amount of water it calls for, put in that much coffee.
  3. Spray Bundt pan really well.
  4. Put half of the brownie batter into the bundt pan, then pour the cream cheese mixture on top of that and then add rest of brownie batter.
  5. Bake until a toothpick inserted comes out clean (30 - 45 minutes)
  6. Let set in pan for 10 minutes once its done and then flip out onto a plate.
  7. Optional: melt 1/2 c chocolate chips and 1 T butter and drizzle on top.

Pineapple Delight (Cheesecake)

Yup I did it 🙂 I had to incorporate the name Cheesecake in the title somehow! This is such a delicious creamy dessert it qualified for that name. Although the texture is nothing like a baked Cheesecake, I would say it has alot of the same ingredients and flavors as most cheesecake.

Cinnamon Rolls and Caramel Icing

If I told you that you can make Homemade Cinnamon Rolls in a matter of 2-3 hours and that they would be ‘awesome’  and ‘simple’ and ‘delicious’, would you be interested?! 

Well that’s right, that’s just what I am about to tell you 🙂 This is the first time I ever made them (after watching my mom make them for many years) and it was just as simple as watching her make them, and I sent her a picture after they were done baking and she said they looked just like hers  **happy sigh**

I have detailed instructions attached to make it easy for you to make them 🙂 If you have any questions about it be sure to ask in the comments and I will try my best to help you. Lucky for me I could call 1-800-askmom if I had a question 😉 

Cinnamon Rolls (10) edited

 First mix the following ingredients in the bosch mixer:

5 1/4 c hot water
1/2 c sugar
1 teas salt
1/2 c oil
2 beaten eggs

Then add 10 c Raised A donut mix & 4 Tblsp instant yeast. Mix until well blended then add 4 c reg flour & at least 3 c additional donut mix ( possibly more). Let mix for 10 min. Put in greased bowl & let rise until doubled in size. (approx 45 minutes)

Preheat oven to 400*

Now divide dough into 3 equal pieces.

One by one roll out dough into a rectangular shape (shown below) on well floured surface.

Melt 4 T butter

Spread a thin layer of melted butter onto dough, then sprinkle a thin layer of white sugar on top of that, and now a thick layer of cinnamon on top of that 🙂

Start at the wide edge of the dough and roll it together tightly. Once you get to the other side pinch the ends together so they don’t fall apart when you start slicing them.

Now take your sharp knife and simple slice them in about 1 – 1 1/2” slices.

Put in a well greased pan of your choice, (I used these round ones but you can use pretty much anything that is oven safe) Using your palm push the center of the dough down slightly after putting it in the pan. This makes for more evenly sized rolls.

As you can see here, its okay to have some empty space in the pan when you are putting the slices in. I let it rise again for about 15 minutes then put it in the oven and baked at 400 for 10 minutes or until it was the desired golden brown at the top that I wanted!

 

Icing:

Melt 2 sticks butter in a medium sized pot over high heat, add 2 c brown sugar and bring to a boil. Boil for 2 minutes stirring constantly. Quickly add 1/2 c milk and heat just a bit.

Set in cold water and beat in 4 cups powdered sugar. Let cool and spread on rolls! I normally just spread it on the rolls as I am ready to eat them so they don’t get soggy!

Dough

  4. 4 c powdered sugar
Instructions
  1. Put first five ingredients in bosch mixer.
  2. Add about 10 cups donut mix and yeast and mix well.
  3. Add flour and rest of the donut mix and mix well for 10 minutes
  4. You may have to add a little more flour, you want the dough to be a little sticky but still able to work with it with your hands so it doesn't just stick to your hands.
  5. Put in a greased bowl and let rise until doubled in size. Approx 45 minutes.
  6. Now divide dough into 3 equal pieces.
  7. Roll each pieceof dough into a rectangular shape on a well floured surface. It should be about 1/2'' thick.
  8. Melt 4 T butter
  9. Put a thin layer of butter on pieces of dough that are rolled out.
  10. Now put a thin layer of white sugar over the butter.
  11. And now a thick layer of cinnamon on top of the sugar.
  12. Start on the wide edge and roll dough tightly together. Once you get to the other edge simply pinch the edges together so it stays closed.
  13. Slice into 1 to 1 1/2'' pieces and place into well greased pan.
  14. Let rise for about 15 minutes again
  15. Bake at 400 for 10 minutes or until golden brown on top.
  16. Let cool and enjoy :)
Icing
  1. Melt butter, add sugar and bring to boil. Let boil for 2 minutes, stirring constantly. Add milk and heat just a little bit.
  2. Put in cold water and beat in powdered sugar. Let cool and then refrigerate until ready to use.
Notes
  1. I normally only frost the rolls that we are ready to eat at the moment to avoid them getting soggy!

Strawberry Pretzel Dessert

Happy Friday to you all! Yay for the weekend being here 🙂 Seems like weekends are so short anymore, I would like to start planning meals ahead of time and prepare as much as I can in advance so I don’t have to be in the kitchen all weekend when my hubby is home… Sigh, maybe eventually I will get it accomplished.

But anyway, today I am sharing an absolutely delicious recipe with you, I know strawberries are past for this year, but you can use frozen berries, fresh from Walmart, Kroger, etc… Trust me, it will be worth buying them to make this if you don’t have any in the freezer.

Crush Pretzels and mix with butter and sugar, press into pan and bake at 400 for 8 minutes.

Mix cream cheese and sugar together, then fold in whipped topping and spread over pretzel crust. (once it has cooled off)

Dissolve the gelatin in the boiling water. Stir in the strawberries and let it sit until it starts to set up just a lil bit. Spread over cream cheese mixture and refrigerate.

For the Crust
  1. 2 c. crushed pretzels
  2. 3/4 c melted butter
  3. 3 T white sugar
For the Cream Layer
  1. 1 - 8oz cream cheese
  2. 1 c. white sugar
  3. 1 - 8oz whipped topping
For the Strawberry layer
  1. 3/4 c. strawberry gelatin (or 6 oz)
  2. 2 c. boiling water
  3. 2 1/2 c. fresh strawberries
Crust
  1. Preheat oven to 400.
  2. Stir together crushed pretzels, melted butter, and sugar, mix well and press in bottom of 9 x 13 pan. Bake 8 to 10 min until set.
  3. Set aside to cool.
Cream Cheese Filling
  1. In large bowl mix together cream cheese and sugar.
  2. Fold in whipped topping.
  3. Spread mixture onto cooled crust, be sure to spread around the edges to seal off the crust.
Strawberry layer
  1. Dissolve the gelatin in the boiling water.
  2. Stir in the strawberries and let it sit until it starts to set up just a lil bit.
  3. Spread over cream cheese mixture.
  4. Refrigerate till ready to serve. Be sure to set it level in fridge…
Notes
  1. It is very important to let the Strawberries and gelatin water cool off and set a little or the gelatin will melt through the cream cheese layer and into the pretzels and you will have soaked up pretzels!

Banana Bread

Having too many Bananas in the house ‘can’ be a good thing! 🙂 The other week I had some bananas that had to be used, so I got my banana bread recipe put and was so happy with how it turned out and how delicious it is! I even had enough to share with the neighbors plus put some in the freezer for later!

Its a very simple recipe and so delicious! Here ya go, try it for yourself;

Banana Bread

makes 4 loaves

4 eggs

2 c mashed bananas

1 c veg oil

6 T buttermilk

3 c white sugar

2 t vanilla

4 c flour

2 t baking soda

1 t salt

2 c chopped nuts (optional)

½ c chocolate chips (optional)

Preheat oven to 350* Pour in well greased bread pans and bake for 40-50 minutes or until toothpick comes out clean.  Let set for 10 minutes before taking out of pans.

Peaches and Cream Pie

Summertime is here! And with it we have all the fresh garden produce, fresh fruit, pool parties, and campfires. Yes I love this time of the year!

This is one of my husband’s favorite desserts so last week when I got fresh peaches I was happy for the chance to make it for him.  It’s simple, delicious and the best Peach Pie I ever had!

Butter Pecan Cake w/ Caramel Icing

Here is another cake recipe that is absolutely FANTASTIC (in my opinion anyway)  Have you ever noticed how much I love ‘simple’ recipes? I look at every recipe before I pin it on Pinterest, just to see how difficult the instructions are to make it and also to see if I have all the ingredients, or at least most of them. If the recipe is really complicated or calls for exotic ingredients I don’t even bother adding it to my boards :/ I mean who wants to walk around the grocery store looking for ingredients and being afraid to ask an employee cause you don’t even know how to pronounce them.

Anyways so much for that long row…

Heres the recipe for the Ahh-mazing Butter Pecan Cake,

First you will need to buy a Butter Pecan Cake Mix at your local grocery store, most Walmarts have them now. Mix as directed on the box and bake in a jelly roll pan (15x11x1 I think) Once a toothpick comes out clean it is done. Cool the cake.

In the mean time, mix together:

8 oz cream cheese

¾ c brown sugar

Beat well then fold in 8 oz cool whip

Spread on cake.

Now melt ¼ c butter and 1 c. brown sugar together, (do not boil) Once heated well remove from heat and stir in 1 c sour cream. Let cool and drizzle over the top of the frosted cake.
