These are so simple to make and of course we can call them ‘slightly’ healthy since they have apples right??! Haha

Cinnamon Rolls and Caramel Icing

If I told you that you can make Homemade Cinnamon Rolls in a matter of 2-3 hours and that they would be ‘awesome’  and ‘simple’ and ‘delicious’, would you be interested?! 

Well that’s right, that’s just what I am about to tell you 🙂 This is the first time I ever made them (after watching my mom make them for many years) and it was just as simple as watching her make them, and I sent her a picture after they were done baking and she said they looked just like hers  **happy sigh**

I have detailed instructions attached to make it easy for you to make them 🙂 If you have any questions about it be sure to ask in the comments and I will try my best to help you. Lucky for me I could call 1-800-askmom if I had a question 😉

 First mix the following ingredients in the bosch mixer:

5 1/4 c hot water
1/2 c sugar
1 teas salt
1/2 c oil
2 beaten eggs

Then add 10 c Raised A donut mix & 4 Tblsp instant yeast. Mix until well blended then add 4 c reg flour & at least 3 c additional donut mix ( possibly more). Let mix for 10 min. Put in greased bowl & let rise until doubled in size. (approx 45 minutes)

Preheat oven to 400*

Now divide dough into 3 equal pieces.

One by one roll out dough into a rectangular shape (shown below) on well floured surface.

Melt 4 T butter

Spread a thin layer of melted butter onto dough, then sprinkle a thin layer of white sugar on top of that, and now a thick layer of cinnamon on top of that 🙂

Start at the wide edge of the dough and roll it together tightly. Once you get to the other side pinch the ends together so they don’t fall apart when you start slicing them.

Now take your sharp knife and simple slice them in about 1 – 1 1/2” slices.

Put in a well greased pan of your choice, (I used these round ones but you can use pretty much anything that is oven safe) Using your palm push the center of the dough down slightly after putting it in the pan. This makes for more evenly sized rolls.

As you can see here, its okay to have some empty space in the pan when you are putting the slices in. I let it rise again for about 15 minutes then put it in the oven and baked at 400 for 10 minutes or until it was the desired golden brown at the top that I wanted!

 

Icing:

Melt 2 sticks butter in a medium sized pot over high heat, add 2 c brown sugar and bring to a boil. Boil for 2 minutes stirring constantly. Quickly add 1/2 c milk and heat just a bit.

Set in cold water and beat in 4 cups powdered sugar. Let cool and spread on rolls! I normally just spread it on the rolls as I am ready to eat them so they don’t get soggy!

Dough

Instructions
  1. Put first five ingredients in bosch mixer.
  2. Add about 10 cups donut mix and yeast and mix well.
  3. Add flour and rest of the donut mix and mix well for 10 minutes
  4. You may have to add a little more flour, you want the dough to be a little sticky but still able to work with it with your hands so it doesn't just stick to your hands.
  5. Put in a greased bowl and let rise until doubled in size. Approx 45 minutes.
  6. Now divide dough into 3 equal pieces.
  7. Roll each pieceof dough into a rectangular shape on a well floured surface. It should be about 1/2'' thick.
  8. Melt 4 T butter
  9. Put a thin layer of butter on pieces of dough that are rolled out.
  10. Now put a thin layer of white sugar over the butter.
  11. And now a thick layer of cinnamon on top of the sugar.
  12. Start on the wide edge and roll dough tightly together. Once you get to the other edge simply pinch the edges together so it stays closed.
  13. Slice into 1 to 1 1/2'' pieces and place into well greased pan.
  14. Let rise for about 15 minutes again
  15. Bake at 400 for 10 minutes or until golden brown on top.
  16. Let cool and enjoy :)
Icing
  1. Melt butter, add sugar and bring to boil. Let boil for 2 minutes, stirring constantly. Add milk and heat just a little bit.
  2. Put in cold water and beat in powdered sugar. Let cool and then refrigerate until ready to use.
Notes
  1. I normally only frost the rolls that we are ready to eat at the moment to avoid them getting soggy!

Banana Bread

Having too many Bananas in the house ‘can’ be a good thing! 🙂 The other week I had some bananas that had to be used, so I got my banana bread recipe put and was so happy with how it turned out and how delicious it is! I even had enough to share with the neighbors plus put some in the freezer for later!

Its a very simple recipe and so delicious! Here ya go, try it for yourself;

Banana Bread

makes 4 loaves

4 eggs

2 c mashed bananas

1 c veg oil

6 T buttermilk

3 c white sugar

2 t vanilla

4 c flour

2 t baking soda

1 t salt

2 c chopped nuts (optional)

½ c chocolate chips (optional)

Preheat oven to 350* Pour in well greased bread pans and bake for 40-50 minutes or until toothpick comes out clean.  Let set for 10 minutes before taking out of pans.

Chocolate Whoopie Pies

So this morning I had the urge to make Chocolate Whoopie Pies. Since I like having something baked in the house to snack on, yeah its not good for me I know, but… just look at how delicious they look 🙂

. 247Well sadly for you, they’re even better then they look! You’re welcome to come help me eat them but you gotta bring some good cappuccino or hot chocolate along! But I will post the recipe in case you wanna make them!? They’re actually very easy to make.

1 1/2 c vegetable oil

3 c white sugar

3 eggs

1 1/8 c milk

1 c water

1 1/8 c sour cream

1 1/8 t salt

1 1/2 T vanilla

1 1/2 T baking soda

1 1/4 T baking powder

1 1/4 c cocoa

6 c flour

Mix together oil, sugar, and eggs, beat well. Add sour cream and vanilla and mix. add rest of ingredients and beat well. Drop by spoonsful on cookie sheets and bake at 400 for approx 6 min. (until you can touch in center with finger and the indent comes right back out)

Since i get tired of these greasy fillings that really don’t taste good I found a recipe that I like alot better.

Filling:

12 oz cream cheese (softened)

1 1/2 stick butter (softened)

3 beaten egg whites

4 1/2 t vanilla

9 T Milk

5-6 c powdered sugar

Cream together cream cheese and butter, add rest of ingredients and mix well. You want it to be kinda thick so it doesn’t squeeze out of the cookies when you’re eating them, so add powder sugar till the right consistency.

***Update*** 1-30-13

I made these again cause we ate the others so fast! And since the others didn’t have enough icing in them I would recommend using these amounts for the icing.

16 oz cream cheese

2 sticks butter

4 egg whites beaten

6 t vanilla

12 T milk or 3/4 cup would be easier 🙂

7-8 c powdered sugar

Wrap cookies individually with plastic wrap. These are great if you freeze them an eat them when they’re half thawed with a cup of coffee!

Best Ever Granola Bars

The last couple days i have been really hungry for something to snack on and there seems to be nothing in the house :/ So I decided I’d try to make something thats at least a lil healthy..  My sister in law made these delicious Granola Bars recently that are chewy and so awesome so i had to try them 🙂

Here’s the recipe:

4 1/2 c. rice crispy cereal

5 c. quick oats

1 c. coconut

1 c. chocolate chips

1 c. crushed graham crackers

1 c. raisins

Mix all these together in a large mixing bowl, set aside,

In a large kettle melt together:

1 c. butter

1/4 c. oil

1/4 c honey

1/2 c. peanut butter

1 t. vanilla

Heat till hot, but not boiling then add:

2 – 10 oz marshmellows and stir on low heat till they are melted then pour over dry ingredients and mix well. Press into a greased cookie sheet and let cool.

Chocolate Chip Cookies

I have been making Chocolate Chip Cookies for years as i was growing up. However just in the last year i started making them for my brothers business. He sells Portable Storage Buildings  http://www.classicbuildingsales.com/ and we give a dozen cookies to every customer that orders a building so i have been very busy keeping them supplied as well as working in the office part time. In fact, last year I made over 10,000 cookies! 🙂

I have included the recipe here so you can try it if you like.

2 c. butter

1 1/2 c. brown sugar

1/2 c. white sugar

4 eggs

Mix well then add:

4 1/2 c. flour

1 1/2 c. instant vanilla pudding

2 teas. baking soda

Mix together well then add:

2 – 12 oz pkg semi sweet chocolate chips

Mix until just incorporated. Bake at 350 for 8 – 10 min. or until golden brown. Cool and serve! Very delicious!

Enjoy with a glass of cold milk!

This recipe makes approx 6 dozen cookies. I don’t have a count of how many calories are in each cookie but i suppose way too many 🙂
